I did an extensive exhibition of artwork by Vietnam veterans in 2000.
Of the group I worked with, I recommend the following artists:

John Wehrle, Richmond, California (painter/public art muralist)
Arturo Alonzo Sandoval, Louisville, Kentucky (fiber artist)
Michael Aschenbrenner, Los Angeles (or near there), CA (sculptor)
Richard M. Nickolson, Indianapolis, Indiana (painter)
Mike Helbing, Chicago, Illinois (or near there)  (sculptor)

There is also a well-known artist in Indianapolis, Harry Davis, who is a
painter and served in WWII as a combat artist.

Lucy Lippard also curated an excellent exhibition about 15 years ago of
art by Vietnam veterans.  It was for a Seattle museum, possibly the
Seattle Museum of Art.  Sorry, my notes are long packed away or I could
come up with the title for you.
