Part of the anxiety of sending in a resume' is (a) "did it ever get there?"
(if not sent with a "return" card), and (b) "did anyone really look at it?"
Here's another good compromise between politeness and being swamped:
pre-printed/stamped post cards with the message: "Thank you for your
interest in the posted position. Your resume' has been received. You will be
contacted for an interview if deemed appropriate."

If your office printer can handle post card size paper, pre-stamped post
cards are available at the post office. All that would be necessary would be
to print out handfuls of this message on the text side, then dash out the
address of the person by hand on the address side.  I know personally it
would be greatly appreciated.
