For further information, you might try the Oral History Association
(OHA) and their evaluation guidelines at:

http://www.dickinson.edu/organizations/oha/EvaluationGuidelines.html

There are also several good books (which I don't have at my fingertips
right now) that have examples of releases.  I also believe that the OHA
has a listserv.   It sounds that you have gotten good responses from
people who have recently done oral histories as well.
