Starting in 1860 the US census asked for both native language and country
of origin.  Though the categories were not entirely consistent from decade
to decade, it is an everyday sort of research job to distinguish in the
census mss. between, say, Yiddish and Russian-speaking "Russians,"  or
German speakers from Switzerland and Austro-Hungary.
