I lived in Edinburgh for many years and I used to take visitors to the 
Botanic Gradens, which are beautiful.  Inverlieth House Gallery is on the
site, and there iss currently and exhibiotn of the work of Ian Hamilton
Finlay that shouldn't be missed.

Also, Finlay's garden, Little Sparta, in the Borders is a real treat; it
takes about an hour to get there (I understand that they will have shuttle
busses from one of the Galleries in conjunctions witht he exhibitoins in
honor of his 80th).

Just outside of Edinbirgh in the town of Rosslyn is the Rosslyn Chapel,
which is also definitley worth a visit.  You can take a bus from the city
center to Rossyln.  http://www.rosslynchapel.org.uk/

In Edinburgh itself, the Fruitmarket Gallery http://www.fruitmarket.co.uk/
 and the Ingleby Gallery http://www.inglebygallery.com/ are always worth a
visit too.
