I seem to remember that the Manchester City Galleries had a good solution to this problem...  patrons could enter the building through two entrances, and each gave access to both the restaurant and the gift shop.  Conversely, to enter the museum exhibitions, patrons went through a third internal entrance centered between the "commercial" areas.  I frequently would stop in the restaurant, or pop into the gift shop to buy something, even when I was not there to view exhibitions.  It seemed that this easy access seemed to work very well for patrons.  However, several years ago, the Galleries were considering changing the routing, to include a central entrance where fees would be charged to enter ANY facility in the building, gift shop and restaurant included.  I do not know if this idea was ever developed.  Hope this might provide some ideas!
