What about using mini chalkboards?

We did this once with a school group for 20 or so 3rd
graders. They did have to be conscious not to run and
wipe the chalk off their board, which also helped with
the issue of walk don't run.

Most craft stores, like Michael's or Hancock Fabric
sell some type or you can try a place like Oriental
Trading (orientaltrading.com, they sell a lot of
strange things for crafts that teachers can do in
class.
