Re bag thickness (or more than you probably want to know): 

Bag thickness does not matter overly much. What does matter is getting as much air (with its associated gaseous water or "humidity") out of the bag. Therefore, the bag you can best squeeze the air out of is your best choice.

The reason:

You are not trying to keep "condensation" out for two reasons. 

The first is that you can't if you are using polyethylene, no matter how well it is sealed.  Water molecules are small enough to sneak between the polyethylene molecules - that's why a bag of frozen vegetables at the back of the freezer ends up full of "snow."  To actually keep water molecules out you would need to use bags made out of Saran wrap - it is a different substance with a different molecular structure that water molecules cannot penetrate.

The second reason is that the condensation does not come from outside the bag; it is the result of water already in the bag when you start, in the form of "humidity." 

What you are actually trying to do is limit the amount of gaseous water inside the bag that can condense as liquid on the inside walls of the bag when there is a temperature difference between the inside and outside of the bag - ever notice how you get water condensing on a window when the AC is cranked too high?
