Stacy,
There were (in te 1980's) several historic houses in New Orleans that
had period "open hearth/food technology" programs that were part of
their historic interpretations.   I think it's likely they still do.
Try contacting the Hermann Grima (SP!!!) House (sorry have no email, URL
or even correct spelling).  Should be in the Museum Directory with
contact info, if not, try NO CVB (Conven.Visitors Bureau).

Their programs were based on local research, so they prob. can answer
many of your questions.  Also, try Historic New Orleans Collection.
