Hi, I don't know if they still do it, but if I remember correctly the
Schingoethe Center for Native American Cultures at Aurora University had
a program like what you are describing.  In that case the kids actually
learned about how museums work, researched, created and installed their
own exhibit (This was with a grade school) I heard their Associate
Director Meg Bero speak about their M.A.I.Z.E program at the MPMA
conference in 2004.  You might try them.
