One book I've always found helpful is Kenneth Ames and Barbara Franco's
"Ideas and Images: Interpretative History Exhibits" (Alta Mira Press, 1997).
I like it because it really shows the thinking behind the exhibits, and
illustrates the process.

Beverly Serrell's "Exhibit Labels: An Interpretative Approach" (Alta Mira
Press, 1996) is also pretty good, and it's a nice constant reminder to keep
your labels from getting too wordy, and keep them focused on the importance
of the artifact or story you want to tell.
