The Nebraska State Museum and Philadelphia Academy of Sciences both have 
interactive fossil "digs" in their exhibt/discovery spaces. You will 
have to contact them to find out exactly what the stuff is but they both 
use synthetic "sand" that seems to be easy to clean up, isn't dusty, and 
is not a potential source of food for insect or rodent pests.
