Particularly because you have so little time, your best bet is to proceed as 
you have begun, that is, choosing museums that interest you, and contacting 
them directly. Be sure to be clear about the parameters of the internship, 
particularly that your internship is unpaid, and what your learning goals 
are.

In the experience of the Bagatti Valsecchi Museum, Milan, Italy, internships 
involving Italian students are highly regulated (no surprise, there), and 
someone at the museum must be directly in charge of commenting on their work 
on a day-to-day basis (often a burden for the museum). Further, they tend to 
work only throughout the school year (i.e., definitely nothing in August, 
just when the museum may need an extra hand), and are insured for liability 
through their school program. While it wouldn't be sensible for the museum 
to use your time only for photocopying, keep in mind that, particularly in 
small museums with a good work ambiance, everyone pitches in to help with 
everything, so you also should be prepared to do chores that assist the 
daily management of the museum, but may not be theoretical. What the museum 
is able to delegate to you also depends on how long you are able to stay. If 
you are able to stay for only a month, or so, it's not very helpful, and 
they won't be able to delegate important projects that may offer more 
learning opportunities.
