Fort Vancouver National Historic Site (Washington) does interpretive
demonstrations in their kitchen, plus
have large bread ovens they often fire up.   I know years ago they had
some trouble with
locals on the smoke from the larger ovens, but seem to still be doing
it.   They may be able to help
you or steer you in the right directions.  You may also want to check
city ordinances.

What are the thoughts on doing open hearth cooking in historic
structures?
Are there any sites that do this?  Any legal issues involved with this?
 If
any sites are doing this, were there insurance issues?
