While not recommending it as one of my favourites, "The Thomas Crowne
Affair" might fit your bill. I remember watching it, thinking that the
multi-million dollar caper wouldn't work in my (at the time) small,
local history museum (in a town of 6500 people) because we had
something as radical as motion sensors in the shipping bay! So, the
credibility of the story flew out the window for me right there, but
still, it had me thinking about how museums in the real world operate.
I don't know if it'll be as easy to find, but there was a two-part
episode of "Due South" on TV maybe 8 years ago, revolving around a stone
Tsimshian mask in a museum. It's been awhile, but I seem to recall it
was well done.
And, of course, there are several classic Simpsons episodes that
revolve around the Springfield Museum that I'd highly recommend
(particularly the shot of the imposing neo-classical edifice with the
words "Truth Beauty Gift Shop" carved into it!")

watch
