One can make a nice open source touch screen box.  If you have a real
I.T. dept they should have no problem making them and they should be
less expensive then off the shelf touch screen devices.   You will
also be able to re-purpose them  or used re-purposed older computers
depending on the needs of the device.    This is just one example.
A local IT person would also be able to do this really easy and then
support it if you need support.
