Have you contacted the Center for Cultural Understanding and Change at The 
Field Museum?

This strikes me as a likely source for the type of information you seek. 
I'd also try to find staff who were involved in renovating the old North 
gift shop into the Corner Bakery space. (Hey Janice..You listening?)

This restaurant incorporates multicultural food images and artifacts into 
semi-interpretive displays within the dining area. (Semi because there was 
a touch of controversy at the time)
