Emanuele,
There are texts, courses, and careers devoted to answering the question
you posed.  I suggest your starting point should be the principle that
the objects should tell something about people...ideally, those who
made and used the objects; secondarily, those who collected them.
You might identify the array of objects by use and/or manufacture,
then try to decide how they might be used to tell a story about their
makers that is of interest to your visitors.  A theme may emerge which
you can use to tell the story.  Of course, not all objects may be appropriate
to your theme, and I would suggest that it is more important to tell a
coherent story than to ensure that everything is on display.
