Use one space.

Two spaces were used back with typewriters where all characters had the
same width. Two spaces made it easier to read.

Before and after typewriters, characters had varying widths and the extra
space is not needed. That's how typography works.

Unless you are using a typewritten style font for a retro look in your
exhibit, in which case go with the two spaces. :-)
