The American Association of Museums has a tremendous number of materials
available about volunteers, as well as professional contacts to whom they
can direct you.

As for interns -- look for college and university programs that have well
established and meaningful programs through which they direct their students
toward internships.  My favorite remains Grinnell College in Grinnell, Iowa.
I am sure there are others.
