Excellent idea!  Contact museum shops and restaurants directly, see if
they'll share their business plans or sales records with you to
substantiate your hypothesis; get anecdotal support from staff for where
such "hard evidence" is not available.  A great opportunity for original
research, on a really interesting idea.
