This is a comment on an earlier response to your query but isn't really
a suggestion for an interactive exhibit component. However,  it might
lead to something innovative...

Perhaps forced agriculture might be interesting, too;  Native peoples
and their connections to the missions (i.e. San Buenaventura) in your
county.  However, I don't know if you can qualify this as a "fun"
component of an exhibit.

In Wisconsin, simulated cow milking is always a big hit as well as being
able to use a mortar and pestle for grinding.
