The Australian War Memorial does not deliberately keep live bullets in its
collection, because they do pose a danger to staff, the public and the rest
of the collection. Periodically, though,  we do come across live munitions
in the collection. Any bullets that are less than 0.5" calibre are disarmed
by trained staff. Bullets, cannon shells etc of 0.5" or over, and any other
explosive devices (hand grenades, mines etc) we leave to the military to
disarm.  We usually keep a small sample of the propellant for reference
purposes.
