I believe that a museum located in Santa Fe, New Mexico has a root cellar that is open to the public.  The name is El Rancho de las Golondrinas.  Please give them a call at 505/471-2261.

There is a root cellar on our historic site. The choices are to interpret as
a root cellar or to just use the building and
put farm displays inside. Does anyone have a root cellar on their property,
is it open to the public and how is it used?
