I would like to respond to a few points in this discussion.

I would like to suggest that the use of the word "whining" is inappropriate and constitutes just another proverbial kick in the ribs to young folks who are struggling along.  The concerns and frustrations that have been expressed are undeniably real and we should be at least empathetic and sensitive to their being voiced in this forum.

Also, the use of volunteers and interns is indeed a time-honored one.  I do think that some institutions might be crossing a line in the sheer volume of volunteers whom they use.  My own institution has greatly expanded its volunteer program and we now have almost 1000 volunteers - many of them retired folks.  I worry that the use of so many volunteers and their presence being trumpeted as a significant management achievement is seen an effective "cost-cutting  benefit".  The reliance on this sort of system has all kinds of implications for existing professionals and their future.

Several years ago I had heard from someone that there were some legal issues involved in the use of volunteers.  Specifically, they could not be used to make or manufacture a salable product, such as is produced in a factory.  The potentials for abuse would be high, otherwise.  Does anyone know how such a law, if it does exist, applies to museums and the sorts of work that volunteers can or cannot be assigned to?
