The Detroit Institute of Arts has done several conservation related
exhiibts in the past.  You might want to talk to someone in their lab. One
was the restoration of an Italian ceiling - another of an altarpiece and
yet another - a huge American allegorical painting.  Check with the
Conservation Services Lab at the DIA.

Also, maybe 15 - 20 years ago in one of the San Francisco Museums -
probably at one of the Fine Arts Museums - there was a conservation project
of tapestries done in the public eye with educational tours, symposia, etc.
- it was well published.
