Perhaps you could list the coin collection management under a "Curatorial
Experience" heading, and then under a subheading to that category called,
say,  "Related Experience" include your document collection, foreign
language, committee service and art history courses.  This would express to
the reader that you understand and believe such skills and experience to be
relevant to the subject of curating.
