Our public library's literacy program has run an annual trivia bee for nearly two decades.  Income comes from registration fees for the 3-player teams (usually sponsored by local businesses or community organizations), from spectator ticket sales (admission includes dinner), and from drink and raffle ticket sales at the event.  (IIRC, there have also been silent auctions held concurrently with the raffle.)
