Also, you might be able to publish things in your local papers and be paid for it. 

I wrote something for my hometown newspaper and they offered to pay me and reimburse me for photos as well. It wasn't alot (I wasn't doing it for the money anyway), but you could do this to build a portfolio. Depending on the topic, you can run the same article in different papers. 

I recently edited an IT book that my husband wrote-- this was pretty tedious and mind-numbing work, but my name will appear on the front cover as the editor and the book will hit both Amazon.com and .de (Germany) later this summer. If you think you can stomach it, you might also look for these kinds of jobs as they are perhaps not as popular as editing other types of "lighter" material.
