There are two steps to this process. First you have to do the
analog-to-digital conversion. Then you have to edit the resulting
digital files and author a DVD.

I suspect that both the Adobe products are overkill if you simply want
to preserve the oral histories in a more stable manner. Adobe Premier
Pro (I assume this is one of the programs you meant) is really for
extensive editing, so you'd be paying a lot for features that aren't
used. Not to mention the steep learning curve!

You should spend your money on getting high-quality conversion -- that
means hardware, not the software that you asked about. Or perhaps you
already have very good hardware?

If not, and you'd like to test the waters, I recommend reading this
post about how to do this on the cheap. You will probably find that
this will work just as well as any high-cost set up.
