IMHO, the best book on the market about exhibit labels is titled....

Exhibit Labels: An Interpretive Approach

and is by Beverly Serrell. (AltaMira Press, 1996)

Beverly discusses labels from how to write them to how to evaluate them and 
how to design them. Her bibliography is probably the most complete label 
bibliography available.
