Hi Kari,
When I worked at the Maxwell Museum in Albuquerque, grinding corn was a 
regular activity for children visiting the museum.  We used feed corn.  
One word of warning though- never use seed corn.  Some seed corn is 
treated with a mercury compound fungicide and kids will inevitably put 
some of this in their mouth.
When I was a kid, there was a poor family in Southern New Mexico that 
bought seed corn (because it was cheaper) and fed it to their hogs.  The 
seed corn had been treated with this fungicide.  It had disasterous 
consequences for the family when they ate the meat.  Several died and 
others were permanently blinded- a horrible unintended tragedy.
