The new (opened spring 2004) Mayborn Museum Complex at Baylor University in
Waco, Texas has an excellent exhibit on the changing concepts of museums in
general, and specifically on how the collections at Baylor have evolved
since the university's founding in 1845.  The are various examples in the
exhibit showing the "Cabinet of Curiosities" style of exhibition.  Since I
haven't been in several months, I'm not sure if the exhibit is still up, but
I assume it is, as it seemed to be part of their "permanent" exhibit space.
I can't find any pictures on their website, http://www.baylor.edu/mayborn/
but surely you could contact them if you are interested.
