In Dan Brown's DaVinci Code - the Louvre is a central site and in his book 
Angels and Demons the Vatican Secret Archives is featured.  Also, Nick 
Bantock's The Venetian's Wife starts in a museum and the central character 
is a paintings conservator - he also has another book set in a museum, but I 
can't recall the name.

There is a great list at Conservation online listing books, movies, etc. 
with heritage settings and workers.
