Here, the question is what is it worth to you to have your name on a
published book, and what is it worth to the organization - the fee is a
negotiation. Chances are, your hourly rate will turn out to be
laughable, unless you are dealing with a wealthy organization that
really wants YOU.

You need a contract that will spell out very specifically what is
expected from you - research, length, scope, dates of delivery, editing
that will be done, by whom, and who has the final say about the book's
content (including illustrations). Who will own the copyright of the
book? If the organization will, you must agree and sign a "work for
hire" agreement in advance. If you share copyright, or you own it, there
are different issues (like liability, if someone sues).

YOU NEED TO CONSULT AN INTELLECTUAL PROPERTY LAWYER of your OWN before
signing an agreement. However friendly things seem now, there is the
probability of messiness down the line if there are ambiguities in the
agreement.
