At my last museum (San Bernardino County Museum), I know that we tracked people's zip codes through the cash register. We would just ask them when they paid their admission. I don't know if a cash register can be programmed to track demographics, but you might want to check. Asking visitors or doing visually would have to be decided.
At other museums that I have worked at we have tried (with limited success) visitor comment cards that request some demographic information. If you are interested in the form, please contact me off list.
