I, too, have had great success using a filet knife. I've also worked with a
produce knife, the kind that doesn't taper to a point but is just a long
rectangle with one sharpened edge.
The key is to keep sharpening the knife as you work; ethafoam dulls blades
like you wouldn't believe.
I actually prefer this method to using a hot knife--no nasty smells, and I
get good control. If I need to, I can sand the finished shape to smooth out
anything rough.
