Though I have to admit I'm not being totally objective--since I used to be associated with that organization--I've always regarded very highly "Good Show: A Practical Guide for Temporary Exhibitions," which Lothar P. Witteborg prepared for the Smithsonian Institution Traveling Exhibition Service (SITES).  While its primary focus is on temporary and traveling exhibitions, "Good Show" offers an excellent general primer on how to plan, prepare for, fabricate, illuminate, write text for, and install exhibitions.  It also features a very handy "Exhibition Development Outline" which can be used as a checklist when planning and developing exhibitions.
