Whitney, et. al.:  There is a very good site on the web, for the Northern
States Conservation Center in Minneapolis, that has both information about
safe materials for exhibit (among many things), as well as tons of links to
other information on the web.  You should all have it bookmarked.

In answer to your specific question, you could probably use just about any
type of wood, as along as it was adequately sealed on the case interior, to
prevent nasty off-gassing.
