Yeah!
Make "Tacos de papa." These babies are made from left over mashed
potatoes, add a little seasoning (more butter, onions, garlic or herbs or
whatever), mash it all up good and well, put the stuff in flour
tortillas, roll them up (don't forget to use a toothpick to keep them
rolled up), and fry them as you would tacos. Top with sour cream and
pico de gallo salsa or whatever salsa you prefer and enjoy! (Don't
forget to pull the toothpick out!)
