A must read is Tim Padfield's work on environmental control for structures with porous walls, i.e. adobe. Tim used to be employed as a conservation scientist at the SmithsonianThis and much more on museum environmental control can be found on his web site at www.natmus.min.dk/cons/tp/  You should also check with the Getty Conservation Institute. They have done several projects on adobe structures to include a good amount of environmental monitoring. They have a web site and have published several articles on their studies in their newsletter. I have placed an annotated bibliography on practical climate control on the Conservation On Line website at http://palimpsest.stanford.edu/byauth/kerschner/ccbiblio.html
