I would recommend the work of Margarta Ekarv as an interesting way of
looking at text.
Ekarv, M. - 'Combating redundancy: writing texts for exhibitions' in
Hooper-Greenhill, E. (ed) The Educational Role of the Museum, Routledge
ISBN0-415-11287-7.

Also Helen Coxall's (text consultant) work is very interesting.  There is
also an article by her in the above book.
